New Recipe from the Non-Cook

I have been trying new recipes but they haven't been good enough to share with you.  They need work and since we try not to eat the same thing too often, (okay, I would eat the same thing all the time and I try to overcome that for those who pay attention to what we eat) I don't work on re-making the recipes that fast.

Tonight for dinner we had a very simple tasty main dish.  Really, this could not be easier.

Lemon-Parsley Chicken
serves 4

4 skinless boneless chicken breasts (6 oz)
1/4 teaspoon salt
1/4 teaspoon pepper (freshly ground)
1/4 cup finely chopped fresh parsley
2 teaspoons grated lemon rind
PAM spray

1.  Place the chicken between two pieces of waxed paper and pound to 1/4 inch thickness.

2.  Gently combine the parsley and lemon in a small bowl.  Then evenly coat one side of the chicken breasts with half the mixture.

3.  Heat a non-stick skillet.  Spray with Pam.  Add chicken with the lemon parsley side down and cook 4 to 5   minutes.  Then add the rest of the lemon parsley to the top of the chicken and turn it over to cook and additional 4 to 5 minutes or until cooked all the way through.

To be honest, I changed the recipe from the original.  The recipe that I read called for you to cook the chicken breasts in 2 tsp. of olive oil and 1 tsp of light stick butter.  As you may know from a previous post
Apparently My New Best Friend is Named Pam , I am using Pam all the time when I cook rather than olive oil or butter. 

Also, if you would like to add at little more zest, you can squeeze lemon juice over the chicken right before you serve it.   

I hope you enjoy it.  We had it with a salad, broccoli, and mashed potatoes. Let me know if you want me to post recipes or if my lack of cooking skills makes my recipes too easy...
